Ingredients
16 eggs
1 cup whole milk
3 ounces sharp cheddar cheese, grated
2 tablespoons of fresh chives, chopped
1 each roma tomato, small dice
1 avocado, flesh removed, diced
4 slices turkey bacon
fresh ground pepper
1/2 tablespoon butter
Instructions
Set oven to 400 degrees.
Set a saute pan on the stove top and turn the heat on to medium-high. Cook turkey bacon until crispy, set aside to cool. Once cooled, chop into small pieces.
Grease a 9 X 11 pan with butter.
Break eggs into a bowl, whisk until yolks and whites are completely incorporated. Add all other ingredients and whisk together. Pour mixture into the pan and bake for 30-40 minutes, or just until the mixture is set. Frittata should not jiggle when moved, this is how you know it has set.
Divide into 10 servings and enjoy!
