Grilled Cod with Kiwi-Cucumber Salsa
Grilled cod with kiwi-cucumber salsa is a light and airy meal, perfect for a summer night.

Ingredients
- 4 6-ounce cod filets
- 1 teaspoon fresh ginger, grated
- zest 1 lemon
- 2 tablespoons low sodium soy sauce
- 1 tablespoon olive oil
- 3 kiwi fruit skin removed, diced small
- 1 cup cucumber, diced small
- 1/2 cup granny smith apple, diced small
- 1 tablespoon mint, chopped
- juice 1/2 lime
- pinch kosher salt

Find a bag or storage container for marinating. Place cod, ginger, soy sauce, lemon zest and olive oil into the container. Marinate for at least 1 hour.

Turn your grill on to medium high and let it heat for at least 10 minutes. After 10 minutes make sure to clean your grill with a grill brush thoroughly.

While the grill is heating, add the kiwi, cucumber, apple, mint, lime juice and pinch of salt to a mixing bowl. Mix thoroughly, then set aside.

Turn the grill down to medium-low heat.

Take two large pieces of aluminum foil and lay them flat. Place 2 cod filets on top of each piece of foil. Fold the sides of the foil inward so you have a brick of fish. Place the cod brick, smooth side down, on the grill (to prevent sticking, but also preserving flavor). Cook for 15 minutes, or until cooked through. Serve 1 portion of cod with ½ cup of kiwi salsa. Garnish with lime wedges and scallions.
