Blender or food processor
Ingredients
- 6 ounces pistachios toasted
- 3 tablespoons coconut oil melted & cooled
- 1 tablespoon sweetened cocoa nibs
- 1/2 cup almond flour
- 1 tablespoon cocoa powder
Instructions

Take roasted pistachios and place into blender or food processor. Grind on high until nuts become a paste. Slowly add coconut oil. Scrape blender down with a rubber spatula as needed, blend until completely incorporated and resembles peanut butter.

Place mixture into a bowl and add almond flour and cocoa nibs. Mix well to combine.

Place mixture in fridge for at least 30 minutes. Take out 1 tablespoon size balls and roll, set aside. This should equal to about 16. Using a small sieve, dust the cocoa powder over the balls. Refrigerate pistachio balls and enjoy at your leisure.
