Caramelized Onion, Artichoke & Feta Dip

This crowd-pleasing dip is a healthier take on the classic recipe. Prep and cook time is quick, making it the perfect option for your next party or game-day get-together. This flavor-packed appetizer is super satisfying and will have your guests coming back for more.

Ingredients

1- 17.6 ounce container of 5% milk fat greek yogurt

1 tablespoon, 1 teaspoon olive oil, divided

1 red onion, small dice

1/2 yellow onion, small dice

2 tablespoons dried minced onion

1 tablespoon red wine vinegar

1- 12ounce container marinated, quartered artichoke hearts

feta cheese crumbles

Instructions

Special equipment: blender

Place a sauté pan on a stovetop burner and set heat to medium high. Pour 1 tablespoon of olive oil into the pan and allow 2-3 minutes for heating. Transfer red and yellow onions into the pan and let cook until the edges have brown coloring. Stir at this time, and turn the heat down to medium. Cook until onions are a deep brown, but not black.

While onions are cooking  place 1/4 cup of water, vinegar, yogurt, dried onion, and artichoke hearts into the blender. When onions are caramelized, pour into the blender as well. Blend until smooth. Use1 tablespoon more water at a time to loosen the dip if it is to thick to blend.

Sprinkle 1 ounce of feta cheese on one serving of dip. Pair with your favorite veggies, potato chips, or veggie chips for dipping.
