If you haven’t tried shishito peppers before now is the time!
Shishito peppers are small, chili-like peppers with a bright, sweet flavor similar to bell peppers. However, be warned that about 1 in every 10 carries a serious kick of heat!
Trust me: they are delicious and easily addictive. I love making them as an appetizer for parties or as a nutritious snack with just 83 calories per serving.
All you need are 3 ingredients and 15 minutes!
3-Ingredient Blistered Shishito Peppers with Prosciutto

Ingredients
- 12 ounces shisito peppers
- 2 slices thin prosciutto
- 2 tablepsoons fresh mint chopped

Turn your oven to high broil and allow to heat for 5 minutes.

Line a baking sheet with aluminum foil or parchment paper and add shisito peppers in a single layer. Broil for 8-10 minutes. You want them dark brown all over but not burnt. Flip peppers over and broil for another 3-5 minutes, or until the peppers are browned on the other side. Remove from the oven.

While peppers are broiling take the 2 slices of prosciutto and roll them. Slice each roll into thin strips. Separate the strips and place them in a medium size mixing bowl with the mint. Set aside.

Once the peppers are blistered, place them directly into the mixing bowl with the prosciutto and mint (you want the peppers to still be very hot). Toss well to combine, and then let the mixture sit for about 5 minutes. Toss again and serve immediately. Option to garnish with extra mint leaves.
