Cauliflower Mac and Cheese

Ingredients
- 1 large head cauliflower
- 2 ounces smoked gouda cheese shredded
- 1/2 teaspoon salt
- 1 tablespoon grated parmesan cheese
- 1 teaspoon garlic powder
- 1 tablespoon nutritional yeast
- 1/2 cup vegetable stock
- Juice of 1/2 lemon
- Fresh ground pepper
- 1 tablespoon fresh thyme leaves
Instructions

Using a sharp knife, cut the cauliflower into large chunks, including the stem. Discard the leaves.

Place all of the cauliflower bits into a medium sauce pot and add enough water to fully cover all the cauliflower pieces. Place the pot on the stove over high heat and bring to a boil. Continue boiling for 15-20 minutes, or until the cauliflower is nice and soft. Remove from the stove and drain out the water.

Once drained, place half of the boiled cauliflower in a blender along with the vegetable stock, smoked gouda, parmesan, salt, garlic powder, nutritional yeast, lemon juice, and a sprinkle of fresh ground pepper. Blend on high until the mixture is completely smooth. Set aside.

Place the remaining cauliflower in a large mixing bowl and cut any large pieces into smaller ones. Pour the cauliflower cheese sauce over the small cauliflower bits and boom! Cauliflower & cheese!

Garnish with fresh thyme and more fresh ground pepper.
