Baked Apples with Cinnamon Pecan Topping

Pecan Baked Apples

Baked apples are a classic fall dessert. 

Sweetened with brown sugar, cinnamon, and nutmeg, these baked apples get an extra dose of fall with the addition of chopped pecans. 

While they’re easy enough for a weeknight treat, they would also make for a great dessert at Thanksgiving! 

For serving, I like these apples on their own, but you could also top them with vanilla frozen yogurt, plain Greek yogurt, ricotta, or vanilla ice cream for a little more indulgence. 

Tips for making these baked apples

  • Some apples are better for baking than others. Honeycrisp and Jonathan apples are my favorite, but Braeburn, Rome Beauty, Jona Gold, and Empire work well too.  
  • If the pecans smell like they’re getting overcooked, cover the apples with foil and continue baking until the apples are tender.
  • To make these vegan, use melted coconut oil instead of butter. 
  • If you don’t have an apple corer, cut the apples in half. Then, using a paring knife, carefully cut out the hard centers of each half where the seeds are. This will create a small divot for the filling.

Ingredients

  • 2 medium apples
  • 1 tablespoon unsalted butter melted
  • 1 tablespoon packed brown sugar
  • 3/4 teaspoon cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ cup chopped raw pecans

Instructions

  • Preheat the oven to 350 F and line a baking sheet or pan with parchment paper. Set aside.
  • Core and cut each apple in half. Set the halves on the baking sheet, cut-side up.
  • In a small bowl, combine butter, sugar, cinnamon, nutmeg, salt, and chopped pecans.
  • Top each apple half with the pecan mixture and carefully transfer the baking sheet to the oven. Bake for 25 minutes, or until the apples are soft.
  • Remove from the oven and allow the apples to cool for 5 minutes. Enjoy on their own or with a scoop of ice cream or frozen yogurt.
