This hearty soup can be made quickly with ingredients you likely already have in your pantry. This is based on the Italian soup Zuppa di Farro, which is a simple combination of vegetables, pancetta, tomatoes, farro, and broth. We modified the classic dish to make it even more hearty with extra vegetables and additional seasonings. Feel free to play around with the vegetables by adding others like zucchini or squash or another protein like shredded chicken or turkey.
