This is one of my favorite dinners for nights when I’m short on time. Inspired by the filling Italian arancini, this easy one-skillet meal is low-carb and packed with flavor. All you need is a skillet, 5 simple ingredients, and a few spices, and you’ll have dinner on the table in no time.

Follow all the above steps. Scoop mixture into a 9×13 baking dish and top with an additional 1/4 cup of mozzarella cheese. Bake in the oven until cheese is melted about 10 minutes.
Tips From A Home Cook’s Kitchen
- If you don’t have frozen riced cauliflower you can easily make your own by throwing some cauliflower florets into your food processor.
- Adding a fresh herb like chopped parsley or basil would make a great addition to this dish.
- Use whatever brand sauce you have in your pantry and feel free to add a little extra if it seems dry, especially if you’re going to bake it as a casserole.
- Feel free to swap out the cauliflower rice for regular rice.
- I used 99% lean ground turkey because it didn’t taste dry with all the sauce, but feel free to use 93% lean turkey or to use lean ground beef.
- To cut down on sodium, try using a low-sodium marinara.
