This low-carb chicken rollatini is an impressive yet easy recipe to make for your significant other, your family, or as a treat for yourself.
Tips for making the recipe
1. Use whole milk ricotta. While most chicken rollatini recipes involve breading the chicken breasts, I’ve found that you can have an equally delicious meal without the breadcrumb topping. The key is using whole milk ricotta cheese and a good-quality parmesan cheese.
Of course, if you’re on a lower fat diet, feel free to use low-fat ricotta instead. I don’t recommend fat-free ricotta and the flavor and texture just isn’t the same.
2. Buy thin chicken cutlets to save time.
3. Any marinara sauce will work. I like to make my own and store 1-cup servings in the freezer. However, you can easily sub in your favorite store-bought sauce. My go-to brand is Cucina Antica, which is what I used for the nutrition facts. Just keep in mind that different brands have varying amounts of sugar, sodium, and fat.
4. To make this a full meal, I recommend serving the chicken with roasted broccoli and zucchini noodles. If you aren’t on a low-carb diet, swap the zucchini noodles for whole wheat pasta.
