This adorable appetizer is refreshing and incredibly low calorie. The quick prep work makes this the perfect pick for your holiday parties. These bites are tasty, impressive, and super easy to eat!
Ingredients
20 raw, de-veined, shrimp- 16-20 count (peeled or not is your preference)
5 strips thick cut bacon, cut into 1/4s
1- 7 ounce container of plain greek yogurt (5% milk fat if possible)
1 tablespoon fresh dill, chopped
1 tablespoon dried mint
1/2 teaspoon garlic powder
1/2 teaspoon kosher salt
1/2 teaspoon fresh ground pepper
2 tablespoons olive oil
2 tablespoons red wine vinegar
2 cucumbers, cut into 20 rounds, 1/4″ thick
Instructions
Heat oven to 400 degrees.
Line a baking sheet with aluminum foil.
Peel shrimp if they are not already. Wrap each 1/4 piece of bacon around the middle of the shrimp and lay them seam side down so the seam will seal itself while baking.
Cook shrimp for 12-15 minutes or until bacon becomes crispy.
While shrimp are cooking, combine all other ingredients besides cucumber rounds into a mixing bowl. Set aside.
Take shrimp out and allow to cool.
Lay cucumber rounds onto a platter and divide the tzatziki sauce evenly among them. This will amount to about 1 tablespoon per cucumber. Place 1 bacon wrapped shrimp on top of each cucumber and just like that your appetizer is ready!
Garnish with fresh dill and lemon slices.

Tip from Katie’s Kitchen: A traditional tzatziki sauce will have diced or grated cucumber in the sauce. However, putting it on a cucumber round gives it the cucumber flavor necessary for the sauce. Try making a big batch of tzatziki and using it instead of mayonnaise base sauces/dressings for fewer calories.
