Steaming vs. Boiling Potatoes
This recipe calls for steaming, rather than boiling your potatoes. I prefer steaming as it retains more nutrients. Plus, I find it reduces the chance of over-cooking your potatoes — after all, we don’t want them to get too soft and mushy!
I use a microwavable steaming basket, but you can also use a stove-top steamer as well.
If you’d prefer to boil your potatoes, you’ll simply place your sliced potatoes into a pot of water (you only need enough water to just cover the potatoes) and boil for about 10 minutes, or until you can easily pierce your potato slices with a fork.
