This simple and rustic cake brings in the flavors of the fall season and only requires a mixing bowl and a baking dish. Ingredients
- 2 cups unbleached all purpose flour
- 1 cup oat flour
- 1 teaspoon baking soda
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 tablespoon cinnamon
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 3/4 cup canola oil (or creamed butter)
- 3/4 cup unsweetened apple sauce
- 3 medium green apples, peeled and diced (about 4 cups)
- 1 cup raisins
Instructions
Preheat oven to 350 F.
Whisk together flours, baking soda, baking powder, salt, and cinnamon. In a separate bowl whisk together sugars, oil, and apple sauce. Fold in half of the dry mixture until fully incorporated. Fold in the rest of the dry mixture. Add in apples and raisins.
Oil a 9×13″ baking dish. Spread out apple mixture into the baking dish. Bake for 45 minutes. Allow to cool 45-60 minutes before serving.
*If adding nuts mix them in with the apples and the raisins.
