This hummus and avocado sandwich is a quick, easy, healthy lunch option when you’re short on time or don’t feel like cooking.
While it’s inherently vegan, you can easily customize this sandwich idea to meet your individual nutrition needs and health goals.
To increase the protein
Hummus has some protein, but if you’re looking for even more, there are plenty of proteins you can easily add to this simple sandwich.
Some ideas include:
- Baked chicken.
- Sliced turkey.
- Hard boiled or poached egg.
- Baked tofu.
- Grilled shrimp.
- Leftover baked salmon.
- Canned tuna.
To add more nutrients and crunch
I love adding different veggies to my hummus and avocado sandwich based on what I have leftover in the fridge or found on sale at the grocery store.
Here are some easy additions:
- Lettuce or spinach.
- Tomato slices.
- Cucumber or pickles.
- Sprouts.
- Sliced raw or caramelized onion.
- Cooked or pickled beets, sliced.
- Leftover roasted or grilled vegetables.
- Kimchi or sauerkraut.
To reduce the carbs:
Depending on how much you want to reduce the number of carbs, you can choose a bread or wrap that fits better into your macronutrient goals for the day.

Did you know you can freeze hummus and avocados?
If you want to make these sandwiches but are worried about not being able to use up all the hummus or avocado, know that you can easily freeze both of these.
To freeze avocados, either mash with lemon juice and place in a freezer-safe bag, making sure to press out as much air as you can.
Or, you can freeze half an avocado by peeling it, removing the pit, and then brushing it with lemon juice. Again, make sure to place it in an air-tight bag.
For hummus, transfer your hummus to an air-tight container, making sure that it doesn’t completely fill the container as the hummus will expand once frozen.
Drizzle just enough olive oil on top to coat the top of the hummus, then seal and freeze for up to 6 months.
When ready to thaw, simply place it in the fridge overnight. Just make sure to use up thawed hummus within a couple days.
