This spiced apple baked oatmeal is the ultimate cozy breakfast that’s simple to make and perfect for meal prep.
As much as I love a stack of pancakes, baked oatmeal has a leg up in that you don’t have to stand over a griddle flipping pancakes while the rest of your family eats. Instead, all you have to do is mix everything together in a big mixing bowl (no electric mixer needed), pour it into an 8-in x 8-in pan, and bake!
Plus, if you aren’t making this for the whole family, baked oatmeal is also ideal for meal prep as it tastes just as good (if not better) re-heated throughout the week.

Topping ideas for baked oatmeal
While you can add syrup on top, as the recipe is already sweetened, I usually opt for one (or a few) of the topping ideas below:
- Plain Greek yogurt.
- Almond or peanut butter.
- Warm unsweetened almond milk.
- Fresh fruit, such as blueberries or banana slices.
Tips and optional substitutions
- Use rolled, not quick or instant oats, otherwise the mixture will be too mushy.
- If you don’t like the texture of diced apples, you can also shred the apples first.
- Any nuts can be used in place of the almonds. Chopped walnuts or pecans would be especially festive. Of course, you can also leave them out to make the recipe nut-free.
- Feel free to use any type of milk or unsweetened milk alternative.
- While I like the flavor of the butter, you could also use 2 tablespoons of applesauce or mashed banana instead.
- I usually buy a pre-made pumpkin pie spice blend, but you can also make your own by combining the following spices and storing the mix in a glass jar:
- 3 tablespoons ground cinnamon
- 2 teaspoons ground ginger
- 2 teaspoons ground nutmeg
- 1 teaspoon ground allspice
- 1 teaspoon ground cloves
Spiced Apple Baked Oatmeal
Ingredients
- 2 medium apples diced
- 2 cups rolled oats certified gluten-free if needed
- 2 teaspoons pumpkin pie spice or cinnamon
- 1 teaspoons baking powder
- 1/4 teaspoon salt
- 3 cups unsweetened vanilla almond milk
- 1 egg lightly whisked
- 3 tablespoons pure maple syrup
- 2 tablespoons unsalted butter melted and slightly cooled
- 1/3 cup slivered almonds
- Toppings of choice

Preheat the oven to 350 F and set out an 8-in x 8-in baking pan.

Place diced apples in a microwave-safe bowl and microwave for 2 minutes. Set aside.

In a large mixing bowl, stir together oats, pumpkin pie spice, baking powder, and salt. Once mixed, whisk in the almond milk, egg, maple syrup, and melted butter.

Stir in the microwaved apples and slivered almonds. And then pour the mixture into the baking pan.

Bake for 45 to 50 minutes, or until the top of the oatmeal is set and it doesn’t jiggle when you lightly shake it. Remove from the oven and allow it to cool for 10 minutes before slicing. The longer you let it sit, the less it’ll fall apart when you remove it from the pan. Cut into 6 pieces and enjoy with toppings of choice!
