Ways to enjoy these BBQ lentils
I really like this recipe as there are several ways to enjoy them based on your dietary needs and what’s on hand:
- As a vegan alternative to BBQ chicken sandwiches. Top with lettuce and tomato or a slaw.
- Serve as a side dish.
- Use it as a topping for baked potatoes or baked sweet potatoes.
- Spoon onto a salad or lettuce cups for a low-carb alternative.
Tips for making this recipe
- Anytime you cook lentils, make sure to rinse and sort them first, to remove any rocks or debris.
- The barbecue sauce you use will greatly affect the nutrition stats. My top-choice is Primal Kitchen as it’s low in added sugars and made with high-quality ingredients. In general, try to find a BBQ sauce with less than 4 grams of sugar per serving.
- If you’re finding that there’s too much liquid left over, remove the lid and simmer for an extra 5 minutes.
- Smoked paprika adds a slight smoky flavor. However you can use sweet paprika if needed.
