Nice cream was all the rage in 2018, but did you know that there’s a better fruit that will make this calorie conscious dessert creamier without adding extra calories, sugars, or fats? See the recipe below for a whole new way to make this delectable dessert.
*Ripe bananas can be substituted for the recipe below; however, plantains make your nice cream thicker and creamier similar to a gelato.
Mango Nice Cream
Ingredients
- 2 plantains sliced and frozen (see tip)
- 1 cup non-dairy milk (Silk Unsweetened Almond Milk)
- 1 mango sliced and frozen
- 1 tsp vanilla
- Juice from 1 lime
- 2 pitted dates or 1 Tbl maple syrup
- Optional: Pinch of salt
Instructions
Put all ingredients into a high speed blender or food processor and blend until smooth. Add more liquid a tablespoon at a time if needed.
Chocolate Nice Cream
- 3 plantains sliced and frozen (see tip)
- 1 cup non-dairy milk
- 3 Tbl cocoa powder
- 1 tsp vanilla
- 3 pitted dates or 2 Tbl maple syrup
- Pinch of salt
- Optional: 1/2 tsp instant espresso

Pro Tips:
- Slice your banana or plantains into coin shaped pieces and freeze them on a parchment lined baking sheet prior to freezing them in a bag. This added step ensures a smoother nice cream and faster processing time.
- Adding 1/4 tsp of Xanthum Gum to the ingredients above will give your nice cream added volume and creaminess. However, Xanthum Gum is expensive and not necessary for a wonderful dessert.
- Most plantains that you purchase in the store are very under-ripe. The best ripeness for nice cream is when the plantain is mostly black with a little yellow showing. It should still be firm to the touch but have some give like with a ripe peach.
