As the weather cools down, we love the thought of soup for dinner. Made in your slow cooker, this comfort food classic is super simple to whip up, low in calories, and high in protein. Plus it’s an inexpensive meal that the whole family will love.
Tips for making chicken noodle soup in the slow cooker
- To avoid soggy noodles, I recommend cooking your noodles on the stove. Then, rather than stirring them into the soup, add the noodles directly to each serving bowl and ladle the soup on top of the noodles. This way if you have leftovers, you can keep the noodles and soup separate.
- If you plan on not having leftovers, you can cook the noodles in the slow cooker. I included directions for both options in the recipe below.
- Gluten-free? Use gluten-free noodles in place of the egg noodles.
- The key to a good chicken noodle soup is using a good broth. While nothing beats homemade chicken stock, I’ve found Kitchen Basics and Trader Joe’s to have the best-tasting broths.
- Feel free to swap out the vegetables or add even more veggies.
- For a balanced meal, I recommend pairing this soup with a side salad. Depending on your carb goals, you can also add a slice of crusty whole wheat bread for dipping.
