Turkey Lettuce Wraps

Easy, low-carb, and delicious! Try these lettuce wraps for a quick dinner filled with loads of flavor.  Pro tip: add whole grain brown rice to increase the fiber.

Servings: 4 | 190 Calories per Serving

Ingredients
1 tablespoon olive oil
1 small white onion, chopped
1 pound lean ground turkey
Green portions of 2 scallions, sliced
½ red bell pepper, chopped
3 tablespoon low-sodium soy sauce
6 large, crispy lettuce leaves (butter or iceberg work well)

Instructions
1. Heat oil in a large skillet over medium-high heat. Add onion and sauté 2-3 minutes, or until slightly softened. Add ground turkey and sauté 6-8 minutes, or until cooked through.
2. Stir in scallions, bell pepper, and soy sauce, and cook for 2-3 minutes.
3. Spoon turkey mixture into lettuce “wraps,” wrap, and enjoy.
